Ingredients

The salad

  • 8 cups spinach
  • 2 cups brussels sprouts, shaved

  • 1 cup pomegranate seeds
  • 1 whole apple, sliced or diced

The dressing

  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons finely minced shallot
  • 2 teaspoons honey
  • 2 teaspoons coconut aminos
  • 2 tablespoons sesame seeds, toasted if desired

Instructions

  1. Combine all salad ingredients in a bowl and toss to mix.
  2. Make the dressing by mixing dressing ingredients in a small bowl or jar.
  3. Toss the salad with the dressing to coat.
  4. Toast sesame seeds in a small saucepan over medium-high heat until golden brown, if desired.
  5. Serve as a side salad or add protein on top.
