Harvest Apple Salad

Ingredients

Dressing

  • cup light apple juice
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • a pinch salt
  • a pinch pepper
  • 1 tablespoon canola oil

Salad

  • 6 cups Spring Mix or other baby greens
  • 1 medium Granny Smith apple
  • 2 ounces crumbled goat cheese
  • ¼ cup chopped walnuts

Instructions

  1. Mix the apple juice, vinegar, honey, salt, and pepper in a bowl until combined.
  2. Add the canola oil to the mixture and stir well.
  3. On each plate, place 1 ½ cups of greens.
  4. Top each plate with ¼ of the apple slices.
  5. Sprinkle ½ ounce of goat cheese and 1 tablespoon of walnuts on each salad.
  6. Shake or stir the dressing before drizzling 2 tablespoons over each salad.
  7. If not serving immediately, store leftover dressing in the fridge and toss apple slices in lemon juice to prevent browning.
