Ingredients

The pastry

  • 1 cup water
  • 6 Tbsp butter, diced
  • 2 tsp granulated sugar
  • ½ tsp salt
  • 1 cup bread flour
  • 3 large eggs
  • 2 large egg whites
  • Chocolate sauce or powdered sugar for topping

Pastry cream

  • cups whole milk
  • ½ cup heavy cream
  • cup granulated sugar
  • 2 large eggs
  • ¼ cup cornstarch
  • 2 Tbsp all-purpose flour
  • tsp salt
  • 1 tsp vanilla extract
  • 1 Tbsp butter

Sweetened whipped cream

  • 2 cups heavy whipping cream
  • 6 Tbsp powdered sugar

Instructions

  1. Prepare the pastry cream and chill for 2 hours.
  2. Preheat the oven to 425°F.
  3. In a saucepan, bring water, butter, sugar, and salt to a boil.
  4. Remove from heat, add bread flour, and mix until combined.
  5. Return to heat and cook until the mixture forms a ball.
  6. Cool for 5 minutes, then stir in eggs and egg whites one at a time.
  7. Drop mixture onto lined baking sheets and bake for 25-30 minutes until golden brown.
  8. Cool completely, then cut in half and fill with pastry cream and whipped cream.
  9. Top with chocolate sauce or powdered sugar.
