Ingredients

Cream Puff Shells

  • ¾ cup all-purpose flour
  • 6 tablespoons unsalted butter
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • 3 large eggs

Egg Wash

  • 1 egg
  • 1 teaspoon water

Strawberry Cream Filling

  • 1 teaspoon unflavored gelatin
  • 4 teaspoons cold water
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 1 cup freeze-dried strawberries

Chocolate Ganache

  • 4 ounces semi-sweet chocolate
  • ½ cup heavy whipping cream

Instructions

  1. Preheat the oven to 425°F and prepare baking sheets.
  2. In a saucepan, bring butter, sugar, salt, and water to a boil.
  3. Remove from heat and stir in flour until a ball forms.
  4. Let cool for 5 minutes, then mix in eggs one at a time until smooth.
  5. Pipe the dough into 1 ½-inch rounds on the baking sheets and brush with egg wash.
  6. Bake at 425°F for 5 minutes, then reduce to 375°F and bake for 30 minutes until golden.
  7. For the filling, dissolve gelatin in cold water and then heat to liquefy.
  8. Whip heavy cream with powdered sugar and vanilla, then slowly add gelatin.
  9. Crush freeze-dried strawberries and fold into the whipped cream.
  10. Fill cooled cream puffs with the strawberry cream using a piping method.
  11. For the ganache, heat cream and pour over chocolate, whisk until smooth.
  12. Drizzle ganache over filled cream puffs or dunk them.
