Instructions
- Preheat the oven to 425°F and prepare baking sheets.
- In a saucepan, bring butter, sugar, salt, and water to a boil.
- Remove from heat and stir in flour until a ball forms.
- Let cool for 5 minutes, then mix in eggs one at a time until smooth.
- Pipe the dough into 1 ½-inch rounds on the baking sheets and brush with egg wash.
- Bake at 425°F for 5 minutes, then reduce to 375°F and bake for 30 minutes until golden.
- For the filling, dissolve gelatin in cold water and then heat to liquefy.
- Whip heavy cream with powdered sugar and vanilla, then slowly add gelatin.
- Crush freeze-dried strawberries and fold into the whipped cream.
- Fill cooled cream puffs with the strawberry cream using a piping method.
- For the ganache, heat cream and pour over chocolate, whisk until smooth.
- Drizzle ganache over filled cream puffs or dunk them.
