Instructions
- Preheat the oven to 400°F and line two baking sheets with parchment paper.
- In a saucepan, combine water, butter, and salt, and bring to a boil.
- Remove from heat, add flour, and stir until a smooth ball forms.
- Let the mixture stand for 5 minutes, then add eggs one at a time, beating well after each addition until smooth.
- Drop 5 balls of dough onto each baking sheet, spaced at least 3 inches apart.
- Prepare the egg wash by whisking together the egg yolk and milk, then brush it over the puffs.
- Bake for 30-35 minutes until golden brown, then cool on wire racks and cut slits for steam to escape.
- Chill a mixing bowl and whisk, then combine cream, powdered sugar, and vanilla, beating until stiff peaks form.
- Split the cooled puffs, fill with whipped cream, and dust with powdered sugar before serving.
