Corn + Goat Cheese Pizza

Ingredients

The dough

  • 1 cup whole grain cornmeal
  • 1 cup all-purpose flour

The toppings

  • ½ cup creme fraiche
  • 1 pinch smoked paprika
  • 1 unit shallot, thinly sliced
  • 1 unit charred poblano pepper
  • 1 ear corn, kernels removed
  • 1 cup crumbled goat cheese
  • 1 cup baby arugula
  • ½ cup cilantro
  • 1 tsp extra virgin olive oil
  • ½ unit lime juice
  • 1 pinch salt and pepper

Instructions

  1. Preheat the oven to 500°F and prepare the dough as instructed.
  2. Roll the dough out very thin, about 1/8 inch, and transfer it to a parchment-lined baking sheet.
  3. Spread the creme fraiche over the dough and sprinkle with smoked paprika.
  4. Layer half of the goat cheese, poblano, shallots, corn, and the remaining goat cheese on top.
  5. Bake for 12-15 minutes until the top is browned, then broil for an additional minute.
  6. In a bowl, mix baby arugula, cilantro, olive oil, lime juice, and a pinch of salt and pepper.
  7. Top the baked pizza with the arugula mixture and cut into slices.
