Ingredients

The pizza base

  • 1 10-inch flat bread or small pizza crust

The toppings

  • 1 medium white onion (cut into thin rings)
  • to taste salt and pepper
  • to taste olive oil or butter (for sautéing)
  • 3 ounces goat cheese
  • 1 splash milk
  • to taste fresh basil or arugula (for topping)

Instructions

  1. Preheat the oven to 400°F (204°C) and position a rack in the middle.
  2. Sauté the onion in olive oil or butter over medium heat until soft, seasoning with salt and pepper.
  3. Brush the flatbread with olive oil and pre-bake in the oven for about 5 minutes.
  4. Mix goat cheese with a splash of milk until smooth and spreadable.
  5. Remove the flatbread from the oven, spread with goat cheese, and top with sautéed onions.
  6. Bake for an additional 10 minutes until edges are crisp and toppings are warmed through.
  7. Slice and serve with desired toppings, such as balsamic reduction and fresh basil.
