Grilled Vidalia Onion, Goat Cheese and Arugula Flatbread Pizza

refrigerated thin crust pizza dough or Flat Outs flatbreads

Instructions
- 1. Preheat the grill to 350°F, creating direct and indirect grilling zones.
- 2. Slice the onions into medium thick rings and oil the grill grates with canola oil.
- 3. Grill the onions on direct heat for 4-5 minutes per side, basting with balsamic vinegar.
- 4. Once grilled, remove the onions and cut them into smaller pieces.
- 5. Roll out the pizza dough on a floured surface and place it on the indirect side of the grill.
- 6. Cook the dough for 4-5 minutes until char marks form, then flip and cook the other side.
- 7. Spread balsamic glaze on the dough, add scoops of goat cheese, and top with grilled onions.
- 8. Cover and let the pizza bake for 4 minutes until the cheese melts and the crust is charred.
- 9. Remove the pizza and garnish with arugula before serving.
