Pork Loin Flatbread Pizzas

Ingredients

The flatbreads

  • 4 pieces Flat Outs Wraps/flatbreads
  • 8 oz goat cheese
  • 2 cups arugula

The toppings

  • 1 piece Smithfield Roasted Garlic & Herb Pork Loin Filet
  • 1 medium red onion, chopped in ¼” rings
  • 2 tbsp balsamic glaze

Instructions

  1. Prepare the grill for medium heat with two zones: direct and indirect.
  2. Slice the pork loin filet in half for even cooking.
  3. Oil the grill grates and grill the pork until it reaches 145°F internal temperature.
  4. Let the pork rest under foil after removing it from the grill.
  5. Grill the onion rings until charred and then let them cool.
  6. Slice the pork into bite-sized pieces and chop the grilled onions.
  7. Layer two flatbreads on a platter, topping them with goat cheese, pork, and onions.
  8. Drizzle with balsamic glaze and place on the indirect side of the grill.
  9. Bake the pizzas on the grill for 8-10 minutes until crispy and cheese is melted.
  10. Remove from the grill, top with arugula, drizzle more balsamic glaze, and slice into pieces.
