Instructions
- Prepare the grill for medium heat with two zones: direct and indirect.
- Slice the pork loin filet in half for even cooking.
- Oil the grill grates and grill the pork until it reaches 145°F internal temperature.
- Let the pork rest under foil after removing it from the grill.
- Grill the onion rings until charred and then let them cool.
- Slice the pork into bite-sized pieces and chop the grilled onions.
- Layer two flatbreads on a platter, topping them with goat cheese, pork, and onions.
- Drizzle with balsamic glaze and place on the indirect side of the grill.
- Bake the pizzas on the grill for 8-10 minutes until crispy and cheese is melted.
- Remove from the grill, top with arugula, drizzle more balsamic glaze, and slice into pieces.
