Ingredients

  • 1 piece Smithfield Slow Roasted Golden Rotisserie Tenderloin
  • 4 pieces Low Carb Tortillas
  • 1 cup sugar free, low carb BBQ sauce
  • 1 cup shredded cheddar/mozzarella cheese
  • 1 large bunch fresh oregano

Instructions

  1. 1. Preheat the oven to 375 degrees.
  2. 2. Slice the pork tenderloin into small, uniformly sized pieces.
  3. 3. Heat a tablespoon of coconut oil or avocado oil in a skillet and sauté the pork until it reaches an internal temperature of 145 degrees, which should take about 10 minutes.
  4. 4. While the pork is cooking, toast the tortillas for 5 minutes.
  5. 5. Layer the toasted tortillas with BBQ sauce, cheese, and pork, dividing the ingredients equally among the 4 pizzas.
  6. 6. Place the pizzas back in the oven for 5 minutes or until the cheese has melted.
  7. 7. Remove the pizzas from the oven and garnish with fresh oregano and pepper.
  8. 8. Serve immediately.
