Instructions
- 1. Preheat the oven to 375 degrees.
- 2. Slice the pork tenderloin into small, uniformly sized pieces.
- 3. Heat a tablespoon of coconut oil or avocado oil in a skillet and sauté the pork until it reaches an internal temperature of 145 degrees, which should take about 10 minutes.
- 4. While the pork is cooking, toast the tortillas for 5 minutes.
- 5. Layer the toasted tortillas with BBQ sauce, cheese, and pork, dividing the ingredients equally among the 4 pizzas.
- 6. Place the pizzas back in the oven for 5 minutes or until the cheese has melted.
- 7. Remove the pizzas from the oven and garnish with fresh oregano and pepper.
- 8. Serve immediately.
