Ingredients

The Chicken Crust

  • 1 pound shredded rotisserie chicken
  • 1 cup Part-Skim Grated Mozzarella Cheese
  • 2 large eggs

The Toppings

  • ¼ cup Sugar-free BBQ sauce
  • 1 ½ cups smoked Gouda cheese, grated
  • ¼ cup sliced red onion
  • 2 slices crisp bacon, crumbled
  • as much as you like chopped cilantro (or whole leaves)

Instructions

  1. Shred the chicken and season with salt and pepper.
  2. Preheat the oven to 400°F and line a sheet pan with parchment paper.
  3. Mix the chicken crust ingredients together and pat them onto the parchment paper.
  4. Bake the crust for 20 minutes until the edges are brown.
  5. Spread BBQ sauce over the crust and top with Gouda cheese, onions, and bacon.
  6. Bake for an additional 5 minutes until the cheese melts.
  7. Top with cilantro, cut, and serve.
