Instructions
- Preheat the oven to 425°F.
- Mix the flour, baking powder, xanthan gum, and salt in a bowl. Gradually add warm water to form a soft dough.
- Shape the dough into a ball and roll it into a 10-inch circle on a floured surface.
- Transfer the dough to a greased pizza pan and pinch the edges to form a crust.
- Drizzle olive oil on top and par-bake for 8-10 minutes until golden.
- Spread BBQ sauce on the crust and toss the chicken with the remaining sauce.
- Layer the chicken, cheese, onion, and any additional veggies on top.
- Bake at 450°F for 8-10 minutes until the cheese is melted and the crust is golden.
- Sprinkle with cilantro if desired, slice, and serve hot.
