Ingredients

Crust

  • 2 cups gluten free all-purpose flour
  • 3 ½ teaspoons baking powder
  • 2 teaspoons xanthan gum
  • ¾ teaspoon fine grain kosher salt
  • ¾ cup warm water
  • 1 tablespoon light olive oil

Toppings

  • ½ cup BBQ sauce
  • 1 cup cooked shredded chicken
  • cup shredded mild cheddar cheese
  • ½ small red onion
  • ½ to ⅔ cup diced veggie of choice
  • ⅓ to ½ cup crumbled feta or goat cheese
  • to taste kosher salt and pepper
  • to garnish chopped cilantro

Instructions

  1. Preheat the oven to 425°F.
  2. Mix the flour, baking powder, xanthan gum, and salt in a bowl. Gradually add warm water to form a soft dough.
  3. Shape the dough into a ball and roll it into a 10-inch circle on a floured surface.
  4. Transfer the dough to a greased pizza pan and pinch the edges to form a crust.
  5. Drizzle olive oil on top and par-bake for 8-10 minutes until golden.
  6. Spread BBQ sauce on the crust and toss the chicken with the remaining sauce.
  7. Layer the chicken, cheese, onion, and any additional veggies on top.
  8. Bake at 450°F for 8-10 minutes until the cheese is melted and the crust is golden.
  9. Sprinkle with cilantro if desired, slice, and serve hot.
