Ingredients

The pizza

  • 1 medium-to-large pizza crust
  • 1 cup chopped or shredded cooked chicken
  • cup thick and sweet barbecue sauce
  • 2 tablespoons barbecue sauce
  • ¾ cup shredded smoked gouda cheese
  • ¾ cup shredded mozzarella cheese
  • ¼ to ½ red onion thinly sliced
  • to taste salt and pepper
  • to taste chopped fresh cilantro
  • optional ranch for dipping

The oil

  • to brush olive oil

Instructions

  1. Preheat the oven according to the pizza crust instructions.
  2. Toss the cooked chicken with 2 tablespoons of barbecue sauce and season with salt and pepper.
  3. Brush the unbaked pizza crust with olive oil and place it on a greased baking sheet.
  4. Spread the remaining barbecue sauce over the crust, leaving a border around the edges.
  5. Layer half of the gouda and mozzarella cheese on the crust, followed by the chicken and red onion.
  6. Top with the remaining gouda and mozzarella cheese.
  7. Bake the pizza according to the crust instructions.
  8. Sprinkle with chopped cilantro, slice, and serve with ranch if desired.
