Ingredients

Chicken Crust

  • 1 pound shredded rotisserie chicken
  • 1 cup Part-Skim Grated Mozzarella Cheese
  • 2 large eggs

Toppings

  • ¼ cup Sugar-free BBQ sauce
  • 1 ½ cups smoked Gouda cheese, grated
  • ¼ cup sliced red onion
  • 2 slices crisp bacon, crumbled
  • as much as you like chopped cilantro

Instructions

  1. Shred the chicken and season with salt and pepper.
  2. Preheat the oven to 400°F and line a sheet pan with parchment paper.
  3. Mix the chicken crust ingredients together and pat into the parchment-lined pan.
  4. Bake for 20 minutes until edges are brown.
  5. Spread BBQ sauce over the crust and top with Gouda cheese, onions, and bacon.
  6. Bake for an additional 5 minutes until cheese melts.
  7. Top with cilantro, cut, and serve.
