Grilled Flatbread Pizza

Ingredients

The flatbread and oil

  • 2 pieces naan flatbreads
  • to taste none olive oil for brushing

The toppings

  • 4 ounces burrata cheese
  • 1 cup halved grape or cherry tomatoes
  • cup fresh sweet corn
  • 1 piece avocado, sliced
  • ½ cup arugula
  • to taste none basil vinaigrette for drizzling
  • to taste none kosher salt
  • to taste none black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush both sides of the naan with olive oil.
  3. Place the naan on the hot grill and grill for 3-5 minutes, flipping halfway through until grill marks appear.
  4. Cut the burrata into chunks and place it on the warm flatbread to allow it to melt.
  5. Top with tomatoes, sweet corn, avocado slices, and arugula.
  6. Drizzle with basil vinaigrette and season with salt and black pepper to taste.
