Grilled Caprese Naan Pizza

Ingredients

The base

  • 2 naan naan
  • ¼ cup balsamic vinegar
  • Olive oil mister or cooking spray

The toppings

  • 1-2 handfuls cherry or grape tomatoes, halved
  • 1-2 handfuls small fresh mozzarella balls (ciliegine)
  • ¼ cup fresh basil ribbons
  • Salt + pepper to taste

Instructions

  1. Heat balsamic vinegar in a small saucepan and simmer until reduced to about a tablespoon.
  2. Heat a grill pan over medium-high heat and spray both sides of one naan with olive oil.
  3. Place the naan in the pan, pressing down to sear, and cook each side until charred.
  4. Repeat the process with the second naan.
  5. Top each naan with tomatoes, mozzarella, and basil, then season with salt and pepper.
  6. Drizzle with balsamic reduction, cut into wedges, and serve.
