Ingredients

The flatbread and toppings

  • 1 package naan flatbread (garlic or plain flavor)
  • 2 pieces peaches (pitted and sliced)
  • ½ cup arugula pesto
  • 4 ounces fresh mozzarella cheese (sliced and quartered into chunks)
  • 1 cup fresh arugula leaves
  • to taste balsamic glaze (if desired)

The cooking oil

  • as needed extra virgin olive oil

Instructions

  1. 1. Preheat the grill to medium-high heat and prepare the grate with oil.
  2. 2. Lightly oil the peach slices and grill them for about 3 minutes on each side until caramelized.
  3. 3. Remove the peaches and keep them warm.
  4. 4. Spray or brush the naan with oil and grill for about 2 minutes on each side until marked.
  5. 5. Spread arugula pesto on each naan, then top with grilled peaches, mozzarella, and arugula.
  6. 6. Drizzle with balsamic glaze if desired and serve.
