Grilled Flatbread with Peaches and Arugula Pesto

fresh mozzarella cheese (sliced and quartered into chunks)

The cooking oil

Instructions
- 1. Preheat the grill to medium-high heat and prepare the grate with oil.
- 2. Lightly oil the peach slices and grill them for about 3 minutes on each side until caramelized.
- 3. Remove the peaches and keep them warm.
- 4. Spray or brush the naan with oil and grill for about 2 minutes on each side until marked.
- 5. Spread arugula pesto on each naan, then top with grilled peaches, mozzarella, and arugula.
- 6. Drizzle with balsamic glaze if desired and serve.
