Grilled Peach, Basil and Vegan Goat Cheese Pizza

Ingredients

The pizza

  • 1 ½ grilled/roasted peaches, pitted and sliced
  • ¼ cup chopped basil
  • 1 piece pizza dough, homemade or store-bought
  • 4 oz vegan goat cheese
  • olive oil to brush

The balsamic reduction sauce

  • ½ cup balsamic vinegar
  • 1-2 tablespoons coconut sugar
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground black pepper

Instructions

  1. Prepare the balsamic reduction by heating all ingredients in a pot over medium-high heat, stirring until it thickens.
  2. Preheat the grill to high heat and prepare the pizza dough by rolling it out to a 12-inch circle.
  3. Brush one side of the dough with olive oil and place it on the grill, cooking for 2-4 minutes until grill marks appear.
  4. Flip the dough and quickly add the toppings, then close the grill and cook for another 3-5 minutes.
  5. Check for doneness, move to indirect heat if necessary, then remove from the grill and slice.
  6. Drizzle with balsamic reduction, allow to cool slightly, then serve.
