Peach & Prosciutto Pizza

Ingredients

The pizza

  • 16 oz pizza dough
  • 1 Tbsp olive oil
  • 1 clove garlic
  • to taste salt
  • to taste black pepper
  • 3 oz prosciutto
  • 4 oz ricotta cheese
  • 5 oz fresh mozzarella
  • 2 oz asiago cheese
  • medium fresh peaches
  • cup fresh basil leaves
  • Flour for dusting

The balsamic reduction

  • 1 cup balsamic vinegar
  • ¼ cup honey

Instructions

  1. Preheat the oven to 450°F with the pizza stone inside for 30 minutes.
  2. In a skillet, combine balsamic vinegar and honey, and simmer until reduced to slightly under ½ cup.
  3. Dust parchment paper with flour and stretch the pizza dough into a round shape.
  4. Mix olive oil and minced garlic, then brush the mixture over the pizza crust.
  5. Season the crust with salt and pepper, and layer prosciutto evenly on top.
  6. Dollop ricotta on the pizza, then sprinkle with mozzarella and asiago.
  7. Slice peaches and layer them on the pizza.
  8. Transfer the pizza to the preheated stone and bake for 10-12 minutes until golden.
  9. Remove from oven, top with fresh basil and drizzle with balsamic reduction.
