Ingredients

The dough

  • 1 lb store-bought pizza dough
  • all-purpose flour for dusting
  • 8 Tbsp extra-virgin olive oil
  • to taste kosher salt

The toppings

  • 3 ripe peaches
  • 4 oz wild or baby arugula
  • ½ cup torn basil
  • 3 Tbsp fresh lemon juice
  • to taste freshly cracked black pepper
  • 18 oz burrata or fresh mozzarella
  • to taste good-quality balsamic vinegar

Instructions

  1. Divide the pizza dough into 4 pieces and form into balls, dusting with flour.
  2. Heat olive oil in a skillet and cook each piece of dough until golden brown on both sides.
  3. In a bowl, toss peaches, arugula, basil, lemon juice, and remaining olive oil; season with salt and pepper.
  4. Top the cooked pizzas with the salad, burrata, balsamic vinegar, and additional basil leaves.
