Rustic Grilled Peaches Pizza

Instructions
- Cook the sliced onions in a skillet over medium heat with salt and pepper until caramelized, adding water as needed.
- Simmer balsamic vinegar in a saucepan until reduced to about a tablespoon.
- Preheat the grill to medium high heat.
- Roll out the dough into a disc and brush one side with olive oil.
- Place the dough on the grill and lower the heat, cooking for 2-3 minutes.
- Flip the dough, add caramelized onions and mozzarella cheese, and flip the peach slices, cooking for another 2-3 minutes.
- Remove the pizza from the grill and top with peach slices, blue cheese, walnuts, sage, and arugula.
- Drizzle with balsamic reduction, cut into wedges, and serve.
