Ingredients

Dough

  • ¼ recipe Whole wheat pizza crust

Toppings

  • 1 large onion, sliced
  • to taste Salt and pepper
  • ¼ cup balsamic vinegar
  • 75 g low fat Mozzarella cheese, grated
  • 1 piece peach, sliced
  • 25 g blue cheese, crumbled
  • 25 g toasted walnuts, chopped
  • 1 tsp fresh sage, chopped
  • to taste fresh arugula leaves

Instructions

  1. Cook the sliced onions in a skillet over medium heat with salt and pepper until caramelized, adding water as needed.
  2. Simmer balsamic vinegar in a saucepan until reduced to about a tablespoon.
  3. Preheat the grill to medium high heat.
  4. Roll out the dough into a disc and brush one side with olive oil.
  5. Place the dough on the grill and lower the heat, cooking for 2-3 minutes.
  6. Flip the dough, add caramelized onions and mozzarella cheese, and flip the peach slices, cooking for another 2-3 minutes.
  7. Remove the pizza from the grill and top with peach slices, blue cheese, walnuts, sage, and arugula.
  8. Drizzle with balsamic reduction, cut into wedges, and serve.
