Peach, Basil, Mozzarella, & Balsamic Pizza

Instructions
- Combine yeast, warm water, and sugar; let sit for 5 minutes.
- Mix semolina flour, all-purpose flour, and salt in a stand mixer.
- Add yeast mixture and olive oil; mix and knead for 5 minutes.
- Place dough in a greased bowl, cover, and let rise for 1 hour.
- For the balsamic reduction, boil balsamic vinegar until reduced to ¼ cup.
- Preheat the oven to 500°F and prepare pizza stone if available.
- Divide dough in half, roll out one piece, and place on a cornmeal-coated surface.
- Brush with olive oil, add mozzarella, peaches, and basil, then drizzle with balsamic reduction.
- Bake for 10-15 minutes until crust is golden and cheese is melted.
- Cool for a few minutes, slice, and serve warm.
