Peach, Basil, Mozzarella, & Balsamic Pizza

Ingredients

The pizza dough

  • 2 ¼ teaspoons rapid rise yeast
  • 1 cup warm water
  • 1 pinch sugar
  • 1 ¾ cups semolina flour
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • as needed amount corn meal

The balsamic reduction

  • 1 cup balsamic vinegar

The pizza toppings

  • 2 tablespoons olive oil
  • 8 ounces fresh mozzarella, sliced
  • 4 pieces peaches, thinly sliced
  • ½ cup freshly chopped basil

Instructions

  1. Combine yeast, warm water, and sugar; let sit for 5 minutes.
  2. Mix semolina flour, all-purpose flour, and salt in a stand mixer.
  3. Add yeast mixture and olive oil; mix and knead for 5 minutes.
  4. Place dough in a greased bowl, cover, and let rise for 1 hour.
  5. For the balsamic reduction, boil balsamic vinegar until reduced to ¼ cup.
  6. Preheat the oven to 500°F and prepare pizza stone if available.
  7. Divide dough in half, roll out one piece, and place on a cornmeal-coated surface.
  8. Brush with olive oil, add mozzarella, peaches, and basil, then drizzle with balsamic reduction.
  9. Bake for 10-15 minutes until crust is golden and cheese is melted.
  10. Cool for a few minutes, slice, and serve warm.
