Vidalia Onion Pissaladière Pizzas

Ingredients

The onions

  • 3 Tbsp. extra-virgin olive oil
  • 3 large Vidalia or other sweet onions
  • 2 tsp. Diamond Crystal kosher salt
  • tsp. Morton kosher salt

The pizza dough

  • 1 lb. store-bought pizza dough
  • as needed all-purpose flour for surface

The toppings

  • 4 oz. oil-packed anchovy fillets
  • ½ cup pitted niçoise olives
  • 1 Tbsp. thyme leaves

Instructions

  1. Heat olive oil in a skillet and cook sliced onions with salt until softened, then caramelize for 20–25 minutes.
  2. Prepare a grill and divide the pizza dough into two portions, shaping each into a round.
  3. Brush the dough with oil and grill until bubbles form, then flip and top with onions, anchovies, and olives.
  4. Grill until the crust is golden brown, cover and heat through, then transfer to a cutting board.
  5. Repeat with the remaining dough and toppings, then scatter thyme leaves over the pizzas and cut into wedges.
