Instructions
- Heat olive oil in a skillet and cook sliced onions with salt until softened, then caramelize for 20–25 minutes.
- Prepare a grill and divide the pizza dough into two portions, shaping each into a round.
- Brush the dough with oil and grill until bubbles form, then flip and top with onions, anchovies, and olives.
- Grill until the crust is golden brown, cover and heat through, then transfer to a cutting board.
- Repeat with the remaining dough and toppings, then scatter thyme leaves over the pizzas and cut into wedges.
