Ingredients

  • 2 tablespoons olive oil
  • 1 onion thinly sliced
  • 1 bulb fennel thinly sliced
  • to taste none salt
  • 2 tablespoons water
  • 1 pound pizza dough
  • 1 teaspoon Italian seasoning
  • ¾ cup shredded mozzarella cheese
  • cup kalamata olives, halved and pitted
  • 1 tablespoon grated parmesan cheese (optional)

Instructions

  1. Preheat the oven according to the dough package instructions.
  2. Heat olive oil in a skillet over medium heat.
  3. Add sliced onion, fennel, and salt; cook until lightly browned, about 10-15 minutes.
  4. Reduce heat to low, cover, and cook for an additional 5 minutes until softened.
  5. Uncover, stir in water, and cook until the mixture is golden brown.
  6. Stir in Italian seasoning and adjust salt to taste.
  7. Roll out the pizza dough and transfer it to a baking sheet or pizza stone.
  8. Spread the onion and fennel mixture over the dough.
  9. Top with mozzarella cheese and scatter kalamata olives on top.
  10. Bake for 15-20 minutes, or until the cheese is melted and the dough is golden.
  11. Remove from the oven, sprinkle with parmesan if using, and slice into pieces.
