Ingredients

Dough

  • 2 cups all purpose flour
  • 1 tsp salt
  • ¼ tsp instant yeast
  • ¾ cup water (approximately)

Toppings

  • 3 small yellow onions
  • 2 Tbsp olive oil
  • a pinch salt and pepper
  • 8 oz button mushrooms
  • ¼ tsp dried thyme
  • 1 cup shredded mozzarella
  • handful fresh parsley (optional)

Sauce

  • 1 Tbsp butter
  • 1 clove garlic
  • 4 oz cream cheese
  • ½ cup milk
  • ¼ tsp salt

Instructions

  1. Prepare the dough the night before by mixing flour, salt, and yeast, then adding enough water to form a ball of dough. Cover and let it rest for 12-18 hours.
  2. The next day, slice the onions and sauté them in olive oil over medium-low heat for about 45 minutes until caramelized.
  3. While the onions cook, slice the mushrooms and sauté them in the same skillet after removing the onions, adding salt, pepper, and thyme until moisture evaporates.
  4. For the sauce, sauté minced garlic in butter, then add cream cheese, milk, and salt, whisking until smooth.
  5. Preheat the oven to 500°F and prepare the dough by stretching it into a circle on a floured surface.
  6. Spread the sauce over the dough, then top with caramelized onions, sautéed mushrooms, and mozzarella.
  7. Bake for 12-15 minutes until the crust is golden brown, and sprinkle with parsley if desired.
