Grilled Butternut Squash and Caramelized Onions Pizza

Ingredients

Dough

  • ¼ recipe Whole wheat pizza crust

Toppings

  • 1 large onion, sliced
  • to taste Salt and pepper
  • 125 g sliced mushrooms, cooked
  • 1 thick slice leftover grilled or oven roasted butternut squash, cut into 1” cubes
  • 100 g low fat Mozzarella cheese, grated
  • 1 tbsp fresh sage, chopped

Add-ons (after pizza is out of the oven)

  • 20 g raw pumpkin seeds
  • 1-2 tbsp fresh sage, chopped

Instructions

  1. If you don't have leftover roasted butternut squash, preheat your grill to medium heat or oven to 400F, cut squash into thick slices, brush with olive oil, and season.
  2. Grill or bake the squash until tender, then cool and cut into cubes.
  3. Preheat the oven to 500F.
  4. Heat olive oil in a skillet, add onions, season with salt and pepper, and cook until caramelized, adding water as needed.
  5. Set onions aside and cook mushrooms in the same skillet until golden.
  6. Roll out the dough into a 10-12 inch disc and place on a baking sheet.
  7. Top the dough with caramelized onions, cooked mushrooms, mozzarella cheese, squash cubes, and sage.
  8. Bake for 10-12 minutes until the cheese is melted and slightly browned.
  9. Remove from the oven and sprinkle with pumpkin seeds and additional sage.
