Butternut Squash Chicken Flatbread Pizza

Ingredients

The toppings

  • 1 large sweet onion
  • 1 tablespoon butter
  • 2 tablespoons balsamic vinegar
  • 1 ½ cups diced butternut squash
  • 1 tablespoon grape seed oil
  • 1 flatbread
  • ½ cup shredded chicken
  • 2 oz. crumbled goat cheese
  • 2 tablespoons diced walnuts
  • 1 tablespoon fresh thyme

Seasoning

  • salt & pepper to taste
  • salt to season

Instructions

  1. Preheat the oven to 425°F.
  2. In a skillet, melt butter and sauté sliced onions until caramelized, about 10-15 minutes, then add balsamic vinegar and cook for 2 more minutes.
  3. In another skillet, heat grape seed oil and sauté the butternut squash until slightly browned, about 5-7 minutes.
  4. Place flatbread on a baking sheet and spread the caramelized onions evenly over it.
  5. Sprinkle crumbled goat cheese on top of the onions, then layer on the shredded chicken, butternut squash, and walnuts.
  6. Bake in the oven for 8-9 minutes until the crust is slightly crispy.
  7. Remove from the oven and sprinkle with fresh thyme before serving.
