Ingredients

The pizza base

  • 1 batch Whole Wheat Pizza Dough

The toppings

  • 1 medium Butternut Squash, peeled and diced
  • 1 large Red Onion, sliced
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • ½ cup Feta cheese
  • 1 cup Mozzarella cheese, shredded
  • 2 tablespoons Fresh rosemary, chopped
  • to taste Balsamic vinegar

Instructions

  1. 1. Roast the butternut squash by placing it on a baking sheet, drizzling with olive oil, and seasoning with salt and pepper. Roast at 400°F for 40-50 minutes, stirring occasionally.
  2. 2. Caramelize the sliced red onions using your preferred method.
  3. 3. Preheat the oven to 500°F with a pizza stone inside.
  4. 4. Prepare your pizza dough, using whole wheat crust or store-bought if preferred.
  5. 5. Roll out the pizza crust and drizzle with olive oil.
  6. 6. Add minced garlic, roasted butternut squash, caramelized onions, feta cheese, mozzarella cheese, and chopped rosemary on top.
  7. 7. Transfer the pizza onto the hot pizza stone in the oven.
  8. 8. Bake for 12-15 minutes until the cheese is melted and the crust is golden brown.
  9. 9. Let cool slightly, slice, and drizzle with balsamic vinegar if desired.
