Butternut Squash Pizza

Ingredients

The pizza base

  • 8 ounces pizza dough (store-bought or homemade)

The toppings

  • ½ medium red onion
  • 1 small butternut squash
  • 4 cloves garlic
  • 10–15 leaves fresh sage
  • 2 cups Swiss chard (thinly sliced)
  • 1 large ball burrata cheese
  • 3 tablespoons grated pecorino cheese
  • 1 pinch nutmeg

The seasonings

  • to taste salt
  • to taste black pepper
  • as needed tablespoons extra virgin olive oil

Instructions

  1. Preheat the oven to 475-500°F and let the pizza dough rest on a floured surface.
  2. Sauté the sliced red onion in a skillet over medium-low heat until caramelized, seasoning with salt and pepper.
  3. Peel the butternut squash and slice it into thin ribbons, mixing them with sage leaves, olive oil, salt, and pepper.
  4. In the same skillet, add more olive oil and sauté the garlic until fragrant, then add the chopped sage and Swiss chard, cooking until wilted.
  5. Roll out the pizza dough into a 12-inch round, brush with olive oil, and spread the creamy center of the burrata cheese over it.
  6. Sprinkle nutmeg, salt, pepper, and half of the pecorino cheese over the cheese layer.
  7. Layer the wilted chard mixture, caramelized onions, and butternut squash ribbons on top, finishing with remaining pecorino and pieces of burrata.
  8. Transfer to a pizza stone or sheet pan and bake for 7-8 minutes until golden and cooked through.
