Sweet Potato and Caramelized Onion Pizza

Instructions
- Melt butter in a skillet and add sliced onions, stirring to coat with butter and salt.
- Cook onions on low heat for about 1 hour until caramelized, stirring every 5-10 minutes.
- Preheat the oven to 450°F.
- Mix ricotta cheese with olive oil and fresh thyme leaves.
- Spread half of the ricotta mixture on one flatbread, then top with half of the caramelized onions.
- Use a vegetable peeler to create ribbons of sweet potato and layer them on top.
- Sprinkle half of the feta cheese and additional thyme leaves on top.
- Bake for 5-10 minutes until sweet potatoes are lightly browned.
- Drizzle with olive oil and season with flake sea salt before serving.
