Sweet Potato and Caramelized Onion Pizza

Ingredients

The base and cheese

  • 2 pieces store bought flat breads
  • 1 15-ounce container whole-milk ricotta cheese
  • 3 ounces feta cheese

The toppings

  • 2 large sweet onions
  • 1 small sweet potato
  • 3-4 sprigs fresh thyme leaves

The cooking essentials

  • 2 tablespoons butter
  • ½ tablespoon olive oil
  • to taste Kosher salt
  • to taste flake sea salt

Instructions

  1. Melt butter in a skillet and add sliced onions, stirring to coat with butter and salt.
  2. Cook onions on low heat for about 1 hour until caramelized, stirring every 5-10 minutes.
  3. Preheat the oven to 450°F.
  4. Mix ricotta cheese with olive oil and fresh thyme leaves.
  5. Spread half of the ricotta mixture on one flatbread, then top with half of the caramelized onions.
  6. Use a vegetable peeler to create ribbons of sweet potato and layer them on top.
  7. Sprinkle half of the feta cheese and additional thyme leaves on top.
  8. Bake for 5-10 minutes until sweet potatoes are lightly browned.
  9. Drizzle with olive oil and season with flake sea salt before serving.
