Ingredients

  • 1 medium sweet potato, peeled
  • cup rolled oats
  • 1 large egg
  • ½ teaspoon salt
  • a pinch garlic powder
  • 1 tablespoon olive oil

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Pulse the sweet potato and oats in a food processor until finely mixed.
  3. 3. Add the egg, garlic powder, and salt, and pulse again until it resembles a loose dough.
  4. 4. Transfer the mixture to a parchment-lined baking sheet or pizza pan and shape into crusts.
  5. 5. Bake for 25-30 minutes until the top is dry to the touch.
  6. 6. Let cool, invert onto the pan with the dry side down, and gently peel off the parchment.
  7. 7. Brush the top with olive oil and bake for an additional 5-10 minutes for a crispy finish.
  8. 8. Top with your favorite pizza toppings and return to the oven to melt the cheese.
