Sweet Potato Pizza with Kale and Caramelized Onions

Instructions
- Preheat the oven to 400°F.
- Pierce the sweet potato several times with a fork and roast for about 45 minutes until soft.
- While the potato is baking, heat olive oil in a skillet over low heat and add the sliced onion with a dash of salt, cooking for 30-40 minutes until caramelized.
- Add the chopped kale to the skillet and cook until tender and wilted, then remove from heat and season with salt and pepper.
- Once the sweet potato is done, scoop out the insides into a bowl and mash them, then mix in the milk, sage, and salt until smooth.
- Spread the sweet potato mixture onto the pizza crust.
- Top with half of the cheese, followed by the kale and caramelized onions, then add the remaining cheese on top.
- Bake the pizza in the oven for about 10 minutes until the kale is crispy and the cheese is melted.
