Sweet Potato Pizza with Kale and Caramelized Onions

Ingredients

The pizza base and sauce

  • 1 large sweet potato
  • 1 tbsp olive oil
  • 3 tbsp skim milk or soymilk
  • 1 tbsp fresh sage, chopped
  • 1 prepared whole wheat pizza crust

The toppings

  • 1 large onion, thinly sliced
  • 1 cup chopped kale
  • 1 cup shredded Fontina cheese
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Pierce the sweet potato several times with a fork and roast for about 45 minutes until soft.
  3. While the potato is baking, heat olive oil in a skillet over low heat and add the sliced onion with a dash of salt, cooking for 30-40 minutes until caramelized.
  4. Add the chopped kale to the skillet and cook until tender and wilted, then remove from heat and season with salt and pepper.
  5. Once the sweet potato is done, scoop out the insides into a bowl and mash them, then mix in the milk, sage, and salt until smooth.
  6. Spread the sweet potato mixture onto the pizza crust.
  7. Top with half of the cheese, followed by the kale and caramelized onions, then add the remaining cheese on top.
  8. Bake the pizza in the oven for about 10 minutes until the kale is crispy and the cheese is melted.
