Sweet Potato Kale Pizza

Instructions
- Preheat the oven to 400°F and toss sweet potato and red onion slices with ½ tablespoon olive oil, seasoning with salt and pepper.
- Spread the mixture on a baking sheet and bake for about 20 minutes, turning once, until tender.
- Increase the oven temperature to 500°F and roll out the pizza dough on a floured surface to about ⅜ inch thick.
- Transfer the dough to a cornmeal-coated pizza peel or pan and brush with the remaining olive oil.
- In a bowl, toss the kale with balsamic vinegar, then layer the pizza dough with mozzarella cheese, sweet potato slices, kale, red onion, and rosemary.
- Bake the pizza for 10-15 minutes until the crust is golden and the cheese is melted.
- Let cool for a few minutes before slicing and serve warm.
