Sweet Potato Kale Pizza

Ingredients

The crust

  • 1 pizza favorite pizza dough

The toppings

  • 1 large sweet potato, thinly sliced
  • ½ medium red onion, sliced
  • tablespoons olive oil, divided
  • cups mozzarella cheese
  • cups chopped kale
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon freshly chopped rosemary
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F and toss sweet potato and red onion slices with ½ tablespoon olive oil, seasoning with salt and pepper.
  2. Spread the mixture on a baking sheet and bake for about 20 minutes, turning once, until tender.
  3. Increase the oven temperature to 500°F and roll out the pizza dough on a floured surface to about ⅜ inch thick.
  4. Transfer the dough to a cornmeal-coated pizza peel or pan and brush with the remaining olive oil.
  5. In a bowl, toss the kale with balsamic vinegar, then layer the pizza dough with mozzarella cheese, sweet potato slices, kale, red onion, and rosemary.
  6. Bake the pizza for 10-15 minutes until the crust is golden and the cheese is melted.
  7. Let cool for a few minutes before slicing and serve warm.
