Instructions
- Preheat the oven to 375°F.
- Boil the sweet potato in water for 20 minutes until fork soft, then mash with almond milk, salt, and pepper.
- Spread the mashed sweet potato onto the pizza crust and top with kale, onions, and mozzarella cheese.
- Bake the pizza for 10 minutes until the kale starts to crisp.
- Prepare the balsamic drizzle by heating balsamic vinegar and sugar in a pot until it bubbles, then simmer for 2 minutes.
- Remove the pizza from the oven and drizzle with the balsamic reduction before serving.
