Ingredients

The pizza base

  • 1 gluten free pizza crust gluten free pizza crust mix
  • 1 large sweet potato
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ cup unsweetened almond milk

The toppings

  • 3 cups kale
  • ½ medium onion
  • ½ cup mozzarella cheese

The balsamic drizzle

  • ½ cup balsamic vinegar
  • 2 teaspoons coconut sugar

Instructions

  1. Preheat the oven to 375°F.
  2. Boil the sweet potato in water for 20 minutes until fork soft, then mash with almond milk, salt, and pepper.
  3. Spread the mashed sweet potato onto the pizza crust and top with kale, onions, and mozzarella cheese.
  4. Bake the pizza for 10 minutes until the kale starts to crisp.
  5. Prepare the balsamic drizzle by heating balsamic vinegar and sugar in a pot until it bubbles, then simmer for 2 minutes.
  6. Remove the pizza from the oven and drizzle with the balsamic reduction before serving.
