Sweet Potato and Spinach Pizza

Ingredients

Dough

  • ¼ recipe Whole wheat pizza crust
  • ¼ cup poppy seeds

Toppings

  • 1 large sweet potato
  • 1 tsp extra virgin olive oil
  • to taste salt
  • to taste pepper
  • 1 tsp fresh rosemary, chopped
  • ½ tsp whole fennel seeds
  • 75 g low fat Mozzarella cheese, grated
  • 1 tbsp fresh sage, chopped

Add-ons (after baking)

  • a handful baby spinach leaves, chopped
  • 15 g soft goat cheese, crumbled
  • 15 g walnuts, coarsely chopped
  • ¼ tsp fennel seeds

Instructions

  1. Preheat the oven to 500°F.
  2. Peel and slice the sweet potato very thinly and steam for about one minute.
  3. Remove excess moisture from the steamed sweet potato slices.
  4. Grind salt, pepper, rosemary, and fennel seeds together.
  5. Roll out the dough into a 10-12 inch disc using poppy seeds to prevent sticking.
  6. Place the dough on a floured pizza pan and brush with olive oil.
  7. Sprinkle the ground spice mixture and half of the mozzarella cheese on the dough.
  8. Arrange the sweet potato slices in a circular pattern on the dough.
  9. Top with the remaining mozzarella cheese.
  10. Bake for about 10-12 minutes until the cheese is melted and golden.
  11. Remove from the oven and add the chopped spinach, walnuts, goat cheese, and additional fennel seeds.
