Sweet Potato and Spinach Pizza

Instructions
- Preheat the oven to 500°F.
- Peel and slice the sweet potato very thinly and steam for about one minute.
- Remove excess moisture from the steamed sweet potato slices.
- Grind salt, pepper, rosemary, and fennel seeds together.
- Roll out the dough into a 10-12 inch disc using poppy seeds to prevent sticking.
- Place the dough on a floured pizza pan and brush with olive oil.
- Sprinkle the ground spice mixture and half of the mozzarella cheese on the dough.
- Arrange the sweet potato slices in a circular pattern on the dough.
- Top with the remaining mozzarella cheese.
- Bake for about 10-12 minutes until the cheese is melted and golden.
- Remove from the oven and add the chopped spinach, walnuts, goat cheese, and additional fennel seeds.
