Ingredients

The pizza base

  • 16 ounce pizza dough
  • 1 tablespoon olive oil

The toppings

  • 2 cups shredded Pepper Jack cheese
  • 1 small ear grilled sweet corn
  • 1 unit roasted poblano pepper
  • cup chopped cilantro
  • 2 units avocados
  • cup cotija cheese
  • to taste unit fresh lime juice
  • to taste unit Tabasco sauce

Instructions

  1. Preheat the oven to 450°F.
  2. Roll out the pizza dough on a floured surface into a circle.
  3. Transfer the dough to a pizza pan or stone and spread with olive oil.
  4. Add the cheese, corn, diced poblano pepper, and cilantro on top.
  5. Bake for 18-20 minutes until the crust is golden and the cheese is melted.
  6. Remove from the oven and top with avocado slices and cotija cheese.
  7. Squeeze fresh lime juice over the pizza and serve with Tabasco sauce if desired.
