Ingredients

The main ingredients

  • 2 ears corn
  • 1 unit poblano pepper
  • 2 teaspoons olive oil
  • ¼ unit yellow onion
  • 3 cloves garlic
  • ¼ teaspoon ground cayenne pepper
  • to taste unit salt
  • 8 ounces shredded cheese

The garnishes

  • 1 unit radish
  • to taste unit cilantro leaves
  • 2 unit green onions
  • to serve unit tortilla chips

Instructions

  1. Preheat the oven to 350°F.
  2. Char the corn and poblano pepper on the stove over medium heat for about 5 minutes.
  3. Transfer the poblano pepper to a bowl and cover it to steam.
  4. Sauté onion and garlic in olive oil until softened, about 5 minutes.
  5. Add cayenne pepper and salt to the onion and garlic mixture.
  6. Dice the charred poblano pepper and add it to the mixture.
  7. Remove corn kernels from the cob and mix them with the other ingredients.
  8. Add shredded cheese and mix well.
  9. Transfer to an oven-proof baking dish and bake until bubbly, about 15 minutes.
  10. Garnish with radishes, cilantro, and green onions, and serve with tortilla chips.
