Instructions
- Preheat the oven to 350°F.
- Char the corn and poblano pepper on the stove over medium heat for about 5 minutes.
- Transfer the poblano pepper to a bowl and cover it to steam.
- Sauté onion and garlic in olive oil until softened, about 5 minutes.
- Add cayenne pepper and salt to the onion and garlic mixture.
- Dice the charred poblano pepper and add it to the mixture.
- Remove corn kernels from the cob and mix them with the other ingredients.
- Add shredded cheese and mix well.
- Transfer to an oven-proof baking dish and bake until bubbly, about 15 minutes.
- Garnish with radishes, cilantro, and green onions, and serve with tortilla chips.
