Queso Fundido with Chorizo

Instructions
- Preheat the oven to 400°F.
- Cook the chorizo in a cast iron pan over medium heat until browned, then transfer to a plate.
- Leave some fat in the pan and add onion and jalapeño, cooking until tender.
- Stir in the garlic and cook for an additional minute.
- Remove from heat and mix in some cheese with the vegetables, then layer in the pan.
- Add a layer of chorizo and top with remaining cheese.
- Bake in the oven for about five minutes until melted, then broil for a few minutes for a bubbly top.
- Serve directly from the pan topped with remaining chorizo and sides.
