Queso Fundido with Chorizo

Ingredients

The main ingredients

  • 8 oz Mexican Chorizo
  • ½ cup White Onion, finely chopped
  • 1 tbsp Jalapeño, finely chopped
  • 2 cloves Garlic, minced
  • 8 oz shredded Chihuahua Cheese
  • 4 oz shredded White Cheddar Cheese

For serving

  • to taste Pico de Gallo
  • to taste Guacamole
  • to taste Salsa

Instructions

  1. Preheat the oven to 400°F.
  2. Cook the chorizo in a cast iron pan over medium heat until browned, then transfer to a plate.
  3. Leave some fat in the pan and add onion and jalapeño, cooking until tender.
  4. Stir in the garlic and cook for an additional minute.
  5. Remove from heat and mix in some cheese with the vegetables, then layer in the pan.
  6. Add a layer of chorizo and top with remaining cheese.
  7. Bake in the oven for about five minutes until melted, then broil for a few minutes for a bubbly top.
  8. Serve directly from the pan topped with remaining chorizo and sides.
