Instructions
- 1. Cook the chorizo in a large pan over high heat until crispy, about 10 minutes, then set aside.
- 2. In a separate saucepan, melt the butter and whisk in the cornstarch, cooking for 1 minute.
- 3. Add the evaporated milk and whisk until smooth, then gradually add the cheese until melted.
- 4. Stir in the green chiles, diced tomatoes, and cooked chorizo.
- 5. Season with salt to taste and serve immediately with chips.
