Chorizo Queso

Ingredients

  • 7–8 ounces chorizo
  • 2 tablespoons butter
  • 2 tablespoons cornstarch
  • 1 can (12-ounce) evaporated milk
  • 2 ounces cream cheese
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 1 can (4-ounce) Old El Paso chopped green chiles
  • ½ cup diced tomatoes
  • ½ teaspoon salt

Instructions

  1. 1. Cook the chorizo in a large pan over high heat until crispy, about 10 minutes, then set aside.
  2. 2. In a separate saucepan, melt the butter and whisk in the cornstarch, cooking for 1 minute.
  3. 3. Add the evaporated milk and whisk until smooth, then gradually add the cheese until melted.
  4. 4. Stir in the green chiles, diced tomatoes, and cooked chorizo.
  5. 5. Season with salt to taste and serve immediately with chips.
