Chorizo Queso Dip with Beer and Chiles

Instructions
- Cook the chorizo in a non-stick skillet over medium-high heat for about 10 minutes, then drain the fat.
- In a saucepan, cook the beer and jalapeño over medium-high heat for 5 minutes.
- Reduce heat to low, add evaporated milk, and gradually whisk in the cheese until melted.
- Add the reserved chorizo and green chiles to the cheese mixture, cooking on low for 10 minutes until smooth.
- If the dip is too thick, stir in more evaporated milk to reach desired consistency.
- Garnish with additional jalapeños and serve warm with tortilla chips or over fries.
