Ingredients

The cheese

  • cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese

The base

  • ½ tablespoon unsalted butter
  • cup finely chopped onion
  • 2-3 cloves garlic, minced
  • 15.5 oz fire roasted tomatoes
  • 4 oz green chilies
  • cups milk
  • ½ cup half and half
  • ¼ cup finely chopped cilantro

The spices

  • 1 tablespoon cornstarch
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • to taste salt
  • to taste pepper

Instructions

  1. Combine the shredded cheese with cornstarch in a bowl and set aside.
  2. Melt the butter in a saucepan over medium-high heat.
  3. Add the onions and garlic to the pan and cook until translucent and fragrant.
  4. Reduce heat to medium and add the remaining ingredients, stirring continuously until the cheese melts.
  5. Taste and adjust salt and pepper as needed.
  6. Allow the dip to thicken for about 10 minutes, then remove from heat.
