Homemade Queso Dip

Instructions
- Combine 1 tablespoon of red onion, tomatoes, and 2 tablespoons of cilantro in a small bowl and set aside.
- Heat olive oil in a medium saucepan over medium heat and add remaining red onion, serrano pepper, jalapeño, and salt. Cook for 5 minutes until tender.
- Sprinkle flour over the mixture and cook for another minute, stirring often.
- Whisk in the milk and bring to a simmer, cooking for about 5 minutes until the sauce thickens.
- Add the cheese and cook over low heat until melted.
- Remove from heat, stir in cilantro, and transfer to a serving bowl. Top with the reserved tomato mixture.
- Serve warm with chips and vegetables.
