  • cup onion (diced)
  • 1 each poblano pepper (seeded and diced)
  • 1 each jalapeño (seeded and finely diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon cumin
  • teaspoon red pepper (cayenne pepper)
  • 2 tablespoons whole-wheat flour
  • 1 cup milk
  • 2 cups cheese (freshly grated, like Monterey Jack or Grand Cru)
  • 1 each tomato (finely diced)
  • 1 cup spinach (fresh, cut into ribbons)

Instructions

  1. Melt the butter in a sauté pan over medium heat.
  2. Add the diced onion and peppers, cooking until softened.
  3. Stir in the minced garlic and spices, cooking for an additional minute.
  4. Sprinkle in the flour and stir until the mixture darkens slightly.
  5. Whisk in the milk, breaking up any lumps and allowing it to thicken slightly.
  6. Remove from heat and stir in the cheese until melted.
  7. Gently mix in the diced tomato and spinach.
  8. Serve warm with veggies and/or chips.
