Healthy Queso Dip

shredded cheese (mix of Mexican blend, pepper jack, sharp cheddar)
The finishing touch
Instructions
- Heat the butter in a large saucepan over medium heat.
- Add the onion and jalapeno, sauté for 3-4 minutes until soft.
- Add the garlic and sauté for 30-60 seconds until fragrant.
- Whisk in the flour and cook for 3-4 minutes.
- Increase heat to medium-high and slowly whisk in the milk until combined.
- Cook while whisking frequently for 2-3 minutes.
- Reduce heat to medium and whisk in the cooked sweet potato until combined.
- If lumpy, use an immersion blender to puree until smooth.
- Stir in the chili powder, salt, black pepper, and cayenne.
- Whisk in the cheeses and simmer until melted.
- Stir in lime juice, taste and adjust seasoning if necessary.
- Serve with tortilla chips.
