Healthy Queso Dip

Ingredients

The base

  • 4 tablespoons butter
  • ½ small yellow onion, finely minced
  • ½ small jalapeno, seeded and minced
  • 2-3 cloves garlic, finely minced
  • 4 tablespoons all-purpose flour
  • 2 ½-3 cups milk
  • 1 cup cooked sweet potato

The spices and seasoning

  • 1-2 tablespoons chili powder
  • 1 teaspoon coarse salt
  • ¼ teaspoon ground black pepper
  • a pinch cayenne pepper

The cheese

  • 2 cups shredded cheese (mix of Mexican blend, pepper jack, sharp cheddar)

The finishing touch

  • Juice of 1 small lime

Instructions

  1. Heat the butter in a large saucepan over medium heat.
  2. Add the onion and jalapeno, sauté for 3-4 minutes until soft.
  3. Add the garlic and sauté for 30-60 seconds until fragrant.
  4. Whisk in the flour and cook for 3-4 minutes.
  5. Increase heat to medium-high and slowly whisk in the milk until combined.
  6. Cook while whisking frequently for 2-3 minutes.
  7. Reduce heat to medium and whisk in the cooked sweet potato until combined.
  8. If lumpy, use an immersion blender to puree until smooth.
  9. Stir in the chili powder, salt, black pepper, and cayenne.
  10. Whisk in the cheeses and simmer until melted.
  11. Stir in lime juice, taste and adjust seasoning if necessary.
  12. Serve with tortilla chips.
