Easy Queso Dip

Ingredients

  • 4 plum tomatoes diced
  • ½ medium red onion, finely chopped
  • ½ medium jalapeno, seeded and minced
  • ½ red bell pepper, seeded and finely chopped
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 cup grated Fontina cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup chopped fresh cilantro
  • ½ lime juice
  • ½ large avocado, chopped
  • to taste Tortilla chips for serving

Instructions

  1. Preheat the oven to 375°F.
  2. In a 10-inch cast iron skillet, combine the diced tomatoes, chopped onion, minced jalapeno, chopped red bell pepper, salt, and black pepper.
  3. Layer the cheeses on top of the vegetable mixture.
  4. Bake in the oven until the cheeses are melted and bubbling, about 10-13 minutes.
  5. Remove from the oven and top with cilantro, a squeeze of fresh lime juice, and chopped avocado.
  6. Serve immediately with tortilla chips.
