Ingredients

The cheese mixture

  • 8 oz. sharp white cheddar, coarsely grated
  • 8 oz. mild, medium, or sharp yellow cheddar, coarsely grated
  • 2 Tbsp. sodium citrate

The dip flavorings

  • ½ cup coarsely chopped sliced pickled jalapeños
  • ¼ tsp. sugar
  • ¼ cup crumbled cooked fresh chorizo
  • 2 Tbsp. coarsely grated Oaxaca cheese or Monterey Jack

The serving accompaniments

  • 1 bottle (12 oz.) Lone Star beer or any lager or Pilsner
  • to taste freshly ground pepper
  • to taste store-bought toasted breadcrumbs or panko
  • to taste cilantro leaves with tender stems
  • to taste tortilla chips

Instructions

  1. Simmer the beer in a medium pot and whisk in sodium citrate until frothy.
  2. Add both types of cheese and cook until melted and slightly thickened.
  3. Stir in sugar and jalapeños, seasoning with pepper.
  4. Transfer queso to an ovenproof dish, top with chorizo and Oaxaca cheese, and broil until golden.
  5. Garnish with breadcrumbs, cilantro, and extra jalapeños, then serve with tortilla chips.
