coarsely chopped sliced pickled jalapeños

Lone Star beer or any lager or Pilsner

Instructions
- Simmer the beer in a medium pot and whisk in sodium citrate until frothy.
- Add both types of cheese and cook until melted and slightly thickened.
- Stir in sugar and jalapeños, seasoning with pepper.
- Transfer queso to an ovenproof dish, top with chorizo and Oaxaca cheese, and broil until golden.
- Garnish with breadcrumbs, cilantro, and extra jalapeños, then serve with tortilla chips.
