Ingredients

Tortilla Chips/Boats

  • 8 pieces Old El Paso Taco Boats or flour tortillas cut into triangles
  • as needed ml vegetable oil for frying

Queso Fundido

  • ¼ - ½ pound fresh ground chorizo
  • ½ small sweet onion, finely chopped
  • ¼ cup tequila (or water if desired)
  • 1 ounce can Old El Paso Chopped Green Chiles
  • 8 ounces sharp cheddar cheese, shredded
  • 8 ounces Monterey Jack cheese, shredded
  • 1 tablespoon flour
  • as needed serving fruit or tomato salsa
  • as needed serving fresh cilantro
  • as needed serving jalapenos

Instructions

  1. Heat vegetable oil in a large pot to 350°F for frying the tortillas.
  2. Fry the tortillas or taco boats until golden brown, then drain on paper towels and sprinkle with sea salt.
  3. Preheat the oven to 375°F.
  4. In a skillet, brown the chorizo and set aside, draining excess grease.
  5. In a bowl, mix the cheeses with flour and set aside.
  6. In the same skillet, sauté the onion until soft, then add green chiles and tequila, cooking until reduced by half.
  7. Remove from heat and stir in the cheese mixture until melted, then add the chorizo back into the skillet.
  8. Bake in the oven for 10-15 minutes until the cheese is bubbly.
  9. Serve immediately with cilantro, jalapenos, and salsa for dipping.
