Queso Fundido alla Tequila

Instructions
- Heat vegetable oil in a large pot to 350°F for frying the tortillas.
- Fry the tortillas or taco boats until golden brown, then drain on paper towels and sprinkle with sea salt.
- Preheat the oven to 375°F.
- In a skillet, brown the chorizo and set aside, draining excess grease.
- In a bowl, mix the cheeses with flour and set aside.
- In the same skillet, sauté the onion until soft, then add green chiles and tequila, cooking until reduced by half.
- Remove from heat and stir in the cheese mixture until melted, then add the chorizo back into the skillet.
- Bake in the oven for 10-15 minutes until the cheese is bubbly.
- Serve immediately with cilantro, jalapenos, and salsa for dipping.
