Espresso Caramels

espresso powder or finely ground espresso beans

The Nuts

walnuts, toasted and chopped
Instructions
- Place the chopped walnuts in a mixing bowl.
- In a saucepan, heat the cream, espresso powder, and sea salt until it nearly simmers.
- Stir in the honey and bring the mixture to a boil.
- Reduce heat and simmer, stirring constantly, until the mixture reaches 260°F (hard ball stage).
- Remove from heat and pour the caramel over the walnuts, stirring to coat them.
- Refrigerate for 10-15 minutes to thicken the caramel.
- Drop tablespoonfuls of the mixture onto a prepared baking sheet or spread it out in a pan.
- Let the caramels cool completely before wrapping them in parchment paper.
