Instructions
- Line a baking sheet with parchment paper.
- Create 20 stacks of 5-7 cashews each.
- Melt the caramels in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Spoon caramel onto each cashew pile, ensuring it touches all cashews.
- Chill the caramel-covered cashews in the refrigerator for 5-10 minutes to harden.
- Melt the chocolate wafers in a microwave-safe bowl, stirring every 30 seconds.
- Mix the ground espresso into the melted chocolate.
- Coat the cashew clusters in the chocolate using two spoons.
- Return the chocolate-covered clusters to the parchment-lined baking sheet.
- Optionally, sprinkle with sea salt and refrigerate to harden.
