Ingredients

  • 8 oz soft chewy caramels
  • 14 oz dark melting chocolate wafers
  • 1 ½ tablespoon ground espresso

Instructions

  1. Line a baking sheet with parchment paper.
  2. Create 20 stacks of 5-7 cashews each.
  3. Melt the caramels in a microwave-safe bowl, stirring every 30 seconds until smooth.
  4. Spoon caramel onto each cashew pile, ensuring it touches all cashews.
  5. Chill the caramel-covered cashews in the refrigerator for 5-10 minutes to harden.
  6. Melt the chocolate wafers in a microwave-safe bowl, stirring every 30 seconds.
  7. Mix the ground espresso into the melted chocolate.
  8. Coat the cashew clusters in the chocolate using two spoons.
  9. Return the chocolate-covered clusters to the parchment-lined baking sheet.
  10. Optionally, sprinkle with sea salt and refrigerate to harden.
