Ingredients

  • 8 eggs eggs
  • ½ cup plain Greek yogurt
  • ½ cup milk
  • 1 ½ cups grated cheddar cheese
  • 4 ounces chopped green chilies
  • 1 cup cooked quinoa
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground pepper
  • to taste hot sauce

Instructions

  1. Preheat the oven to 350 degrees.
  2. Spray an 8 x 8 dish with oil.
  3. Beat the eggs in a large bowl.
  4. In a separate bowl, whisk together the yogurt and milk until well combined, then add to the eggs.
  5. Stir in 1 cup of cheese, green chilies, quinoa, salt, pepper, and hot sauce to taste.
  6. Transfer the mixture to the prepared pan.
  7. Top with the remaining ½ cup of cheese and bake for 30 minutes.
